Super Greek sandwich
-(450g) loaf Turkish bread
-1 medium yellow capsicum, thinly sliced
-2 small tomatoes, thinly sliced
-1 Lebanese cucumber, thinly sliced
-1/4 cup sliced black olives, drained
-100g feta cheese, crumbled
-1/4 cup fresh mint leaves, torn
Step 1
Cut bread into 4 pieces. Halve each piece crossways. Top bases with capsicum, tomato, cucumber, olives, feta and mint. Sandwich with bread tops. Serve. ENJOY YOUR MEAL!
