What's the difference between margarine and butter?
Margarine is a solid emulsion of water in a single oil, or blended (1) oils, usually of vegetable origin, it also may contain (2) a percentage of milk. It has a fat (3) content of not less than 80 and not more than 90 per cent. Butter is made from milk (4) and contains about the same amount of fat. Spreads contain less fat and more water - some are specifically marketed as low(5) - fat, while others are made from specific ingredients (6), such as Olivio made from olive oil, or Utterly Butterly made from "pure buttermilk".
