а почему в последнем предложении "were"?

yesterday указывает на то, что в предложении должно быть прошедшее время, в нашем случае Past Simple. Также у нас здесь страдательный залог (эти розы посадил...С ними что-то сделали, а не сами розы что-то делали ), а значит нам надо употребить форму Past Simple Passive >> was/were глагол+ed/3
